  The highlight? The famous "bands" and "chapels". In the bands, the carnival-goers stand arm in arm to sing traditional tunes at the top of their lungs, led by a drum major. The chapels are festive stops where people toast and feast with friends.

  And of course, how can we talk about the Dunkirk Carnival without mentioning the legendary herring throwing? From the balcony of the town hall, kilos of smoked herring are thrown to the compact and hilarious crowd. Catching a herring is almost a trophy! An absurd but so tasty tradition, which embodies the good-natured and offbeat spirit of this unique carnival in the world.
